As promised, this week I’m sharing three recipes that I’ve enjoyed when cooking for just me, or when Hubby’s home, for two. These are recipes I made up or altered from recipes I’ve collected over the years. I’m pretty good at elementary math so adjusting ingredient measures is easy for me. A word of caution, I’m a dumper so I do things until they look or taste good. Don’t be afraid to experiment on your own.

Pepperoni Pizza Soup
1 can Italian diced tomatoes, undrained
1/2 carton of beef broth (I found salt-free broth at Walmart)
three slices onion, chopped
2 fresh mushrooms, diced
1/4 c. sliced pepperoni (I love the turkey pepperoni, less salt and fat)
1/2 t. oregano
1/2 package cheese ravioli
Combine everything but the ravioli and bring to a boil. Simmer for 1 hour. Add ravioli and bring to boil. Simmer for 1/2 hour or until ravioli is tender. Service topped with mozzarella cheelse and chopped black olives.

This is my favorite chicken salad, especially it’s carb free. It’s easy to make for two. Just double everything.

Avocado Chicken Salad for One
1/2 c. chopped or shredded cooked chicken meat
1/2 avocado, diced
1 roma tomato, diced
1/2 slice sweet onion, diced
1/2 c. fresh baby spinach, sliced into strips
2 T. bacon bits or crumpled bacon
handful of shredded cheese
Poppy seed dressing
Toss ingredients together. Sprinkle with dressing and toss again.

Hubby and I love cookies, especially when we have ice cream. We make chocolate chip cookies with half the sugar. They are still sweet, just not the super sweet that most cookies seem. We think of them as “diet” cookies. That’s probably not a good thought since we eat twice as many.

Chocolate Chip Cookies for Two
1/4 c. butter, softened
1/8 c. sugar
1/8 c. brown sugar
3/4 egg (see below)
1//2 t. vanilla
3/4 c. flour
1/4 tsp. baking soda
dash of salt
1/4 c. chocolate chips
Mix butter and sugars until smooth. (Soft butter works better than melted, but both work.) Crack egg into bowl and scramble it. Pour most of it into mixture, along with vanilla and mix. Add dry ingredients and stir until mixed well. (If it needs more moisture, add more egg). Stir in chocolate chips. Mix. Put spoonfulls on a baking sheet. Cook at 350 degrees for 12-15 minutes.
